Tater Tot Chicken Pot Pie

Ingredients: – 2 cups cooked and shredded chicken – 1 cup frozen mixed vegetables (peas, carrots, corn, etc.) – 1/3 cup unsalted butter – 1/3 cup all-purpose flour – 1/2 teaspoon salt

– 1/4 teaspoon black pepper – 1/4 teaspoon dried thyme – 1 3/4 cups chicken broth – 2/3 cup milk – 1 package (about 32 ounces) frozen tater tots

Instructions: 1. Preheat the oven to 375°F (190°C). 2. In a large skillet, melt the butter over medium heat. Add the flour, salt, pepper, and dried thyme. Stir continuously to create a roux. Cook for 1-2 minutes until the mixture

Slowly whisk in the chicken broth and milk to the roux mixture. Continue stirring until the mixture thickens and becomes smooth.

Add the shredded chicken and frozen mixed vegetables to the skillet. Stir well to combine and let it simmer for a few minutes until the mixture is heated through.

1. Transfer the chicken and vegetable mixture into a baking dish, spreading it evenly. 2. Arrange the frozen tater tots on top of the chicken and vegetable mixture in a single layer.
