Super-Delicious Zuppa Toscana

Ingredients: – 1 lb Italian sausage (spicy or mild, based on your preference) – 1 onion, finely chopped – 3 cloves garlic, minced – 4 cups chicken broth – 3 cups water

– 4 large potatoes, peeled and diced – 1 teaspoon salt (adjust to taste) – 1/2 teaspoon black pepper – 1/2 teaspoon crushed red pepper flakes (optional, for extra heat) – 1 bunch kale, stems removed and leaves chopped – 1 cup heavy cream

In a large pot or Dutch oven, brown the Italian sausage over medium-high heat, breaking it apart into small pieces as it cooks. Once browned, remove any excess grease.

Add the chopped onion to the pot and sauté until translucent. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.

Pour in the chicken broth and water, stirring to combine. Add the diced potatoes, salt, black pepper, and crushed red pepper flakes if using. Bring the mixture to a boil, then reduce the heat and simmer until the potatoes are tender (about 15-20 minutes).



1. Stir in the chopped kale and cook until wilted, usually 2-3 minutes. 2. Reduce the heat to low and pour in the heavy cream, stirring to combine. Let the soup simmer for an additional 5 minutes to allow the flavors to meld.
