RITZ Mock Apple Pie

Ingredients: – 2 cups crushed RITZ crackers – 1 3/4 cups granulated sugar – 2 teaspoons cream of tartar – 1 teaspoon ground cinnamon – 1/4 teaspoon salt

– 2 tablespoons lemon juice – 2 cups water – 2 tablespoons butter, cut into small pieces – 2 pie crusts (store-bought or homemade)

Instructions: 1. Preheat your oven to 425°F (220°C). 2. In a large mixing bowl, combine the crushed RITZ crackers, sugar, cream of tartar, ground cinnamon, and salt. Mix well.

1. In a separate saucepan, combine the water and lemon juice. Bring to a boil. 2. Pour the boiling lemon water over the cracker mixture and stir until well combined.

1. Roll out one of the pie crusts and place it in a pie dish. 2. Pour the cracker mixture into the pie crust. 3. Dot the top of the mixture with the small pieces of butter.

1. Roll out the second pie crust and place it over the filling. Seal the edges and cut slits in the top crust to allow steam to escape. 2. Optionally, you can sprinkle a little sugar on top of the crust for added sweetness and a golden finish.

1. Bake in the preheated oven for about 30-35 minutes or until the crust is golden brown. 2. Allow the mock apple pie to cool for a bit before serving.
