Pesto Chicken Grilled Cheese

Ingredients: – 2 boneless, skinless chicken breasts – Salt and pepper to taste – 2 tablespoons olive oil – 1/2 cup pesto sauce

– 4 slices of your favorite bread – 1 cup shredded mozzarella cheese – Butter for grilling

Instructions: 1. Season the chicken breasts with salt and pepper. 2. In a skillet, heat olive oil over medium-high heat. Add the chicken breasts and cook until fully cooked, about 5-7 minutes per side. Ensure the internal temperature reaches 165°F (74°C).

1. Spread a generous amount of pesto sauce on one side of each slice of bread. 2. On the non-pesto side of half the bread slices, place a layer of sliced chicken. Sprinkle shredded mozzarella cheese over the chicken.

1. Top with the remaining slices of bread, pesto side down, to form sandwiches. 2. Heat a skillet or griddle over medium heat and melt a little butter.

1. Place the sandwiches on the skillet and cook until the bread is golden brown and the cheese is melted, about 3-4 minutes per side. 2. Once both sides are golden and the cheese is gooey, remove the sandwiches from the skillet.
