Pecan Pie Muffins

Ingredients: – 1 cup chopped pecans – 1 cup packed brown sugar – 1/2 cup all-purpose flour – 2 large eggs

– 1/2 cup unsalted butter, melted – 1 teaspoon vanilla extract – Pinch of salt – Optional: 1/2 cup chocolate chips (for a twist)

Instructions: 1. Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease the cups. 2. In a bowl, combine the chopped pecans, brown sugar, and flour. Mix well to ensure the ingredients are evenly distributed.

In another bowl, whisk together the eggs, melted butter, vanilla extract, and a pinch of salt until well combined.

1. Add the wet ingredients to the dry ingredients and stir until just combined. If desired, fold in chocolate chips for an extra touch. 2. Spoon the batter into the muffin cups, filling each about two-thirds full.

Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center comes out clean.
