Pecan Pie Cookies

Ingredients: – 1 cup unsalted butter, softened – 1 cup packed brown sugar – 1 large egg – 1 teaspoon vanilla extract

– 2 cups all-purpose flour – 1/2 teaspoon baking powder – 1/4 teaspoon salt – 1 cup chopped pecans

For the filling: – 1/2 cup chopped pecans – 1/3 cup packed brown sugar – 1/4 cup heavy cream – 1 teaspoon vanilla extract

1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper. 2. In a large bowl, cream together the softened butter and brown sugar until light and fluffy.

1. Add the egg and vanilla extract to the butter mixture, and beat until well combined. 2. In a separate bowl, whisk together the flour, baking powder, and salt.

1. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. 2. Fold in the chopped pecans.

Scoop tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheets, leaving some space between each cookie.

In a small bowl, mix together the chopped pecans, brown sugar, heavy cream, and vanilla extract to create the filling.

1. Make a small indentation in the center of each cookie using your thumb or the back of a teaspoon. 2. Spoon a small amount of the pecan filling into the indentation of each cookie.

1. Bake in the preheated oven for 10-12 minutes or until the edges are golden brown. 2. Allow the cookies to cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
