Pecan Pie Bites

Ingredients: – 1 cup chopped pecans – 1/2 cup firmly packed brown sugar – 1/4 cup granulated sugar – 1/2 cup light corn syrup

– 2 tablespoons unsalted butter, melted – 1 teaspoon vanilla extract – 1/8 teaspoon salt – 1 large egg, beaten – 1 package (14 ounces) refrigerated pie crusts (or homemade if preferred)

Instructions: 1. Preheat your oven to 350°F (175°C) and line mini muffin tins with paper liners. 2. In a mixing bowl, combine the chopped pecans, brown sugar, granulated sugar, corn syrup, melted butter, vanilla extract, salt, and beaten egg. Mix until well combined.

1. Roll out the pie crust on a lightly floured surface. Using a round cookie cutter or a glass, cut out circles from the pie crust that will fit into the mini muffin cups. 2. Press each circle of pie crust into the mini muffin cups, forming little crust cups.

1. Spoon the pecan filling into each crust cup, filling them nearly to the top. 2. Bake in the preheated oven for about 12-15 minutes or until the filling is set and the crust is golden brown.
