Overnight Coconut Cream Pie Oats

Ingredients

– 1/2 cup rolled oats – 1/2 cup coconut milk  – 1/2 cup Greek yogurt – 1 tablespoon chia seeds

– 1 tablespoon shredded coconut  – 1-2 tablespoons honey or maple syrup  – 1/2 teaspoon vanilla extract – Pinch of salt – Sliced bananas, toasted coconut, or chopped nuts

In a mason jar or airtight container, combine rolled oats, coconut milk, Greek yogurt, chia seeds, shredded coconut, honey or maple syrup, vanilla extract, and a pinch of salt.

Instructions:

Seal the jar or container and place it in the refrigerator overnight, allowing the oats to absorb the liquids and soften

The next morning, give the oats a good stir. If the mixture is too thick, you can add a splash of coconut milk to reach your desired consistency.

An additional layer of texture and flavour can be achieved by topping the oats with chopped almonds, toasted coconut, or sliced bananas.
