Preheat the Oven:
Preheat your oven to 325°F (163°C). Grease a 9-inch springform pan with butter or non-stick cooking spray.
Make the Crust:
In a medium bowl, combine the graham cracker crumbs, melted butter, and sugar. Press the mixture into the bottom of the prepared springform pan, creating an even crust. You can use the back of a spoon or your hands to press it down firmly.
Bake the Crust:
Bake the crust in the preheated oven for about 10 minutes, or until it's lightly golden. Remove from the oven and let it cool while you prepare the filling. Keep the oven on.
Prepare the Filling:
In a large mixing bowl, beat the cream cheese until smooth and creamy. Add the sugar and vanilla extract, and continue to beat until well combined.
Add Eggs and Dairy:
Add the eggs one at a time, beating well after each addition. Then, mix in the sour cream and heavy cream until the batter is smooth and velvety.
Pour into the Pan:
Pour the cream cheese mixture over the prepared crust in the springform pan. Smooth the top with a spatula to ensure an even surface.
Bake the Cheesecake:
Bake the cheesecake in the preheated oven for about 1 hour or until the center is set and the top is lightly browned. The edges should be slightly puffed, and the center should still have a slight jiggle.
