Mocha Almond Fandango Pie

Ingredients: For the Crust: – 1 1/2 cups chocolate cookie crumbs – 1/3 cup melted butter

For the Filling: – 1 1/2 cups heavy cream – 1/2 cup brewed strong coffee, cooled – 1 teaspoon vanilla extract – 1/2 cup sugar – 1/4 cup cornstarch – 1/4 teaspoon salt

Instructions: 1. Prepare the Crust:In a bowl, combine the chocolate cookie crumbs and melted butter. Press the mixture into the bottom of a pie dish to form the crust. Refrigerate the crust while you prepare the filling.

Make the Filling: – In a saucepan, combine the heavy cream, brewed coffee, and vanilla extract. Heat over medium heat until it just starts to simmer. Do not boil.

– In a separate bowl, whisk together the sugar, cornstarch, and salt. – Gradually whisk the dry ingredients into the cream mixture, stirring constantly until the mixture thickens. – Remove from heat and let it cool slightly.

Prepare the Topping: – Toast the sliced almonds in a dry skillet over medium heat until they are golden brown. Be careful not to burn them. – Let the almonds cool and then sprinkle them over the chilled pie.

Serve: – Just before serving, garnish the pie with chocolate shavings or a dusting of cocoa powder.
