Mississippi Mud Pie

Ingredients: For the crust: – 1 1/2 cups chocolate cookie crumbs (you can use chocolate graham crackers or chocolate sandwich cookies) – 1/2 cup unsalted butter, melted

For the filling: – 1 cup semi-sweet chocolate chips – 1/2 cup unsalted butter – 1 cup granulated sugar – 3 large eggs

– 1 teaspoon vanilla extract – 1/4 cup all-purpose flour – 1/4 teaspoon salt

For the topping: – 1 cup heavy cream – 2 tablespoons powdered sugar – 1 teaspoon vanilla extract – Optional: chocolate shavings or chopped nuts for garnish

Instructions: 1. Preheat your oven to 350°F (175°C). 2. In a bowl, mix the chocolate cookie crumbs and melted butter for the crust. Press the mixture into the bottom of a 9-inch pie pan to form an even crust.

For the filling, melt the chocolate chips and butter together in a heatproof bowl over simmering water or in the microwave. Stir until smooth and let it cool slightly.

In a separate bowl, whisk together the sugar, eggs, vanilla extract, flour, and salt. Add the melted chocolate mixture and mix until well combined.

Pour the chocolate filling over the cooled crust. Bake the pie in the preheated oven for about 25-30 minutes or until the center is set. Let it cool completely.

For the topping, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form. Spread the whipped cream over the cooled pie. Optional: Garnish with chocolate shavings or chopped nuts.

Refrigerate the Mississippi Mud Pie for a few hours or overnight to allow the flavors to meld and the pie to set. Slice and enjoy this rich and indulgent Mississippi Mud Pie!
