Mint Chocolate Chip Brownies

Ingredients: – 1 cup (2 sticks) unsalted butter – 1 cup granulated sugar – 1 cup brown sugar, packed – 4 large eggs

– 1 teaspoon vanilla extract – 1 cup all-purpose flour – 1/2 cup cocoa powder – 1/2 teaspoon baking powder – 1/2 teaspoon salt – 1 cup mint chocolate chips

For Mint Frosting: – 2 cups powdered sugar – 1/4 cup unsalted butter, softened – 3 tablespoons milk – 1/2 teaspoon peppermint extract – Green food coloring (optional) – Additional mint chocolate chips for topping

Instructions: 1. Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking pan. 2. In a large saucepan, melt the butter over medium heat. Remove from heat and stir in both granulated and brown sugars until well combined.

1. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract. 2. In a separate bowl, whisk together the flour, cocoa powder, baking powder, and salt. Gradually add this dry mixture to the wet ingredients, stirring until just combined.

1. Fold in the mint chocolate chips. 2. Pour the batter into the prepared baking pan and spread it evenly.

Bake in the preheated oven for about 25-30 minutes or until a toothpick inserted into the center comes out with moist crumbs (but not wet batter).

While the brownies are baking, prepare the mint frosting. In a medium bowl, beat together the powdered sugar, softened butter, milk, peppermint extract, and green food coloring (if using) until smooth and creamy.

1. Once the brownies are done baking, let them cool completely in the pan on a wire rack. 2. Once cooled, spread the mint frosting evenly over the brownies and sprinkle with additional mint chocolate chips.
