Mint Brownies - Grasshopper Bars

Ingredients: For the Brownie Layer: – 1 cup unsalted butter, melted – 2 cups granulated sugar – 1/3 cup cocoa powder

– 1/2 teaspoon salt – 4 large eggs – 1 1/2 cups all-purpose flour – 1 teaspoon vanilla extract

For the Mint Layer: – 3 cups powdered sugar – 1/2 cup unsalted butter, softened – 3 tablespoons milk – 1/2 teaspoon peppermint extract – Green food coloring (optional)

Instructions: 1. Preheat the oven:Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking pan and set aside.

Make the Brownie Layer:In a large mixing bowl, combine melted butter, granulated sugar, cocoa powder, and salt. Mix until well combined.



Add the eggs one at a time, beating well after each addition. Stir in the flour and vanilla extract until the batter is smooth. Pour the batter into the prepared baking pan and spread it evenly.

Bake the Brownie Layer:Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out with moist crumbs. Allow the brownie layer to cool completely in the pan.

Prepare the Mint Layer:In a medium bowl, beat together powdered sugar, softened butter, milk, peppermint extract, and green food coloring (if using) until smooth. Spread the mint layer evenly over the cooled brownie layer.

Make the Chocolate Topping:In a heatproof bowl, melt chocolate chips and butter together, either using a double boiler or in the microwave in short bursts, stirring between each burst. Once smooth, pour the chocolate over the mint layer and spread it evenly.

Chill and Serve:Place the pan in the refrigerator for at least 2 hours, or until the chocolate topping is set. Once set, cut into squares and serve.
