Lemon Almond Pie

Ingredients: For the Crust: – 1 1/2 cups almond flour – 1/4 cup melted butter – 2 tablespoons sugar – A pinch of salt

For the Filling: – 1 cup sugar – 3 tablespoons cornstarch – 1/4 teaspoon salt – 1 1/2 cups water

– 3 large egg yolks, beaten – 1/2 cup fresh lemon juice – Zest of 1 lemon – 2 tablespoons unsalted butter

Preheat the Oven: – Preheat your oven to 350°F (175°C).

Make the Crust: – In a bowl, combine almond flour, melted butter, sugar, and a pinch of salt. – Press the mixture into a 9-inch pie dish to form the crust. – Bake the crust for 10-12 minutes, or until it's golden brown. Allow it to cool completely.

Prepare the Filling: – In a saucepan, whisk together sugar, cornstarch, and salt. – Gradually whisk in water until the mixture is smooth.

– Place the saucepan over medium heat and bring the mixture to a boil, stirring constantly. – Once it thickens, remove it from heat.

Serve: – Spread the whipped cream over the chilled lemon pie. – Garnish with lemon slices if desired.
