For the Crust

– 1 ½ cups graham cracker crumbs – 6 tablespoons unsalted butter, melted – 1/4 cup granulated sugar

For the Kiwi Passion Fruit Filling

– 4 ripe kiwis, peeled and diced – 1 cup passion fruit pulp  – 1 cup granulated sugar – 1/4 cup cornstarch – 1/4 teaspoon salt – 1/2 cup water – 4 large egg yolks, beaten

For the Meringue Topping

– 4 large egg whites – 1 cup granulated sugar – 1 teaspoon vanilla extract

Preparing the Crust

– Preheat your oven to 350°F (175°C). – In a bowl, combine the graham cracker crumbs, melted butter, and sugar. Mix until the crumbs are evenly coated.

Making the Kiwi Passion Fruit Filling

– In a blender, puree the diced kiwis until smooth. Strain the puree to remove seeds, if desired. – In a saucepan, combine the kiwi puree, passion fruit pulp, sugar, cornstarch, and salt. Mix well. – Gradually add water and whisk to combine.

Preparing the Meringue Topping

1. In a clean, dry bowl, beat the egg whites and cream of tartar with an electric mixer until soft peaks form. 2. Gradually add the sugar, one tablespoon at a time, while continuing to beat until stiff, glossy peaks form.

Assembling the pie

1. Preheat the oven broiler. 2. Spoon the meringue over the pie filling, spreading it to the edges to seal the pie. 3. Place the pie under the broiler for 1-2 minutes or until the meringue is golden brown.
