Easy Mini Pecan Pie

Ingredients: For the Pie Crust: – 1 1/4 cups all-purpose flour – 1/2 cup unsalted butter, cold and cut into small cubes – 1/4 teaspoon salt – 2-3 tablespoons ice water

For the Pecan Filling: – 1 cup chopped pecans – 1/2 cup light corn syrup – 1/4 cup granulated sugar

– 2 tablespoons unsalted butter, melted – 1 teaspoon vanilla extract – 1/8 teaspoon salt – 2 large eggs

1. Preheat your oven to 375°F (190°C). 2. For the pie crust: a. In a food processor, combine the flour, cold butter cubes, and salt. Pulse until the mixture resembles coarse crumbs.

b. Add ice water, one tablespoon at a time, and pulse until the dough comes together. c. Form the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

For the pecan filling: a. In a bowl, whisk together corn syrup, sugar, melted butter, vanilla extract, and salt. b. Add the eggs one at a time, whisking well after each addition. c. Stir in the chopped pecans.

3.  Roll out the chilled dough on a floured surface and cut it into circles to fit your mini pie tins. 4.  Press the dough circles into the mini pie tins.

5.  Spoon the pecan filling into each pie crust. 6.  Bake in the preheated oven for about 20-25 minutes or until the filling is set and the crust is golden brown.
