Easy Lemon Poke Cake

Ingredients: For the cake: – 1 box lemon cake mix – 1 cup water – 1/2 cup vegetable oil – 3 large eggs

For the lemon pudding: – 1 box instant lemon pudding mix – 2 cups cold milk

Instructions: 1. Preheat your oven according to the cake mix instructions. Grease and flour a 9x13 inch baking dish.

1. In a large mixing bowl, combine the lemon cake mix, water, vegetable oil, and eggs. Mix until well combined. 2. Pour the batter into the prepared baking dish and bake according to the package instructions.

While the cake is baking, prepare the lemon pudding. In a separate bowl, whisk together the instant lemon pudding mix and cold milk until smooth. Let it sit for a few minutes to thicken.

1. Once the cake is done baking, remove it from the oven and allow it to cool for a few minutes. 2. Use the back of a wooden spoon or a fork to poke holes all over the cake. Make sure the holes go through to the bottom.

1. Pour the prepared lemon pudding over the warm cake, making sure to fill the holes. 2. Refrigerate the cake for at least 2 hours to allow the pudding to set.
