Coconut Cream Elegance

Ingredients: – 1 can (14 ounces) coconut milk – 1 cup heavy cream – 1/2 cup sugar – 1 teaspoon vanilla extract

– 1/2 cup shredded coconut, toasted – 1 package gelatin (about 2 1/2 teaspoons) – 1/4 cup cold water – Fresh berries for garnish

Instructions: 1. In a small bowl, sprinkle gelatin over cold water and let it bloom for 5 minutes. 2. In a saucepan, heat coconut milk and sugar over medium heat until the sugar dissolves, but do not boil. Stir in the shredded coconut.

Add the bloomed gelatin to the coconut milk mixture, stirring until completely dissolved. Remove from heat and let it cool to room temperature.

In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the coconut mixture until well combined.
