Chicken Caesar Salad

Ingredients: For the Salad: – 2 boneless, skinless chicken breasts – Salt and pepper to taste – 1 tablespoon olive oil – Romaine lettuce, washed and chopped – Croutons – Grated Parmesan cheese

For the Caesar Dressing: – 1/2 cup mayonnaise – 1/4 cup grated Parmesan cheese – 2 tablespoons lemon juice – 2 teaspoons Dijon mustard – 2 cloves garlic, minced – Salt and pepper to taste – 1/3 cup olive oil

Instructions: 1. Season the chicken breasts with salt and pepper. 2. Heat 1 tablespoon of olive oil in a skillet over medium heat. Cook the chicken breasts until they are cooked through and golden brown on the outside.

This usually takes about 6-7 minutes per side, depending on thickness. Once cooked, set aside to cool slightly.

In a small bowl, whisk together the mayonnaise, grated Parmesan cheese, lemon juice, Dijon mustard, minced garlic, salt, and pepper. Slowly drizzle in the olive oil while whisking continuously until the dressing is well combined.

1. Slice the cooked chicken breasts into thin strips. 2. In a large bowl, combine the chopped Romaine lettuce, croutons, and sliced chicken.

1. Drizzle the Caesar dressing over the salad and toss everything together until well coated. 2. Sprinkle additional grated Parmesan cheese on top. 3. Serve the Chicken Caesar Salad immediately, and enjoy!
