Blueberry Delight Pie

Ingredients: For the Crust: – 1 1/2 cups graham cracker crumbs – 1/3 cup melted butter – 1/4 cup granulated sugar

For the Filling: – 2 cups fresh or frozen blueberries – 1 cup granulated sugar – 1/4 cup cornstarch – 1/4 teaspoon salt – 1 tablespoon lemon juice – 1 cup water

For the Topping: – 1 package (8 oz) cream cheese, softened – 1 cup powdered sugar – 1 teaspoon vanilla extract – 1 cup heavy whipping cream

Instructions: 1. Preheat the Oven: – Preheat your oven to 350°F (175°C).

2. Prepare the Crust: – In a bowl, combine graham cracker crumbs, melted butter, and granulated sugar. – Press the mixture into the bottom of a 9-inch pie dish to form the crust. – Bake the crust in the preheated oven for 8-10 minutes or until lightly browned.

3. Make the Blueberry Filling: – In a saucepan, combine blueberries, sugar, cornstarch, salt, lemon juice, and water. – Cook over medium heat, stirring constantly until the mixture thickens and the blueberries burst (about 10 minutes).

4. Prepare the Cream Cheese Topping: – In a mixing bowl, beat the cream cheese until smooth. – Add powdered sugar and vanilla extract, then beat until well combined. – In a separate bowl, whip the heavy whipping cream until stiff peaks form.

5. Assemble the Pie: – Spread the cooled blueberry filling evenly over the cooled crust. – Spoon the cream cheese topping over the blueberry layer, spreading it out to the edges.

6. Chill and Serve: – Refrigerate the pie for at least 4 hours, or overnight, to allow it to set. – Slice and serve chilled. Optionally, you can garnish with additional fresh blueberries or a drizzle of melted white chocolate.
