Blueberry Chia Seed Pie

Ingredients: For the Crust: – 1 1/2 cups graham cracker crumbs – 1/3 cup melted butter – 2 tablespoons sugar (optional)

For the Filling: – 3 cups fresh or frozen blueberries – 1/2 cup sugar (adjust to taste depending on the sweetness of the berries) – 3 tablespoons chia seeds – 1 tablespoon lemon juice – Zest of one lemon – 1/4 teaspoon vanilla extract

Instructions: 1. Preheat the Oven:Preheat your oven to 350°F (175°C).

2. Prepare the Crust: – In a bowl, combine the graham cracker crumbs, melted butter, and sugar (if using). – Press the mixture into the bottom of a pie pan to form the crust. – Bake the crust in the preheated oven for about 8-10 minutes or until it's golden brown.

3. Make the Filling: – In a saucepan, combine the blueberries and sugar. Cook over medium heat until the berries start to release their juices and the mixture thickens slightly (about 5-7 minutes).

– Remove the saucepan from heat and stir in the chia seeds, lemon juice, lemon zest, and vanilla extract. – Let the mixture cool for a few minutes, allowing the chia seeds to absorb some of the liquid and thicken the filling.

4. Assemble the Pie: – Pour the blueberry chia seed filling into the cooled crust, spreading it evenly. 5. Chill and Set: – Place the pie in the refrigerator for at least 2-3 hours or until the filling is set.
