Blueberries and Cream Coffee Cake

Ingredients: For the Cake: – 2 cups all-purpose flour – 1 teaspoon baking powder – 1/2 teaspoon baking soda – 1/2 teaspoon salt

– 1/2 cup unsalted butter, softened – 1 cup granulated sugar – 2 large eggs – 1 teaspoon vanilla extract – 1 cup sour cream

For the Blueberry Swirl: – 1 cup fresh or frozen blueberries – 1/4 cup granulated sugar – 1 tablespoon lemon juice

For the Streusel Topping: – 1/2 cup all-purpose flour – 1/4 cup granulated sugar – 1/4 cup cold unsalted butter, cut into small pieces – 1/2 teaspoon ground cinnamon

For the Cream Cheese Glaze: – 4 ounces cream cheese, softened – 1/2 cup powdered sugar – 1-2 tablespoons milk – 1/2 teaspoon vanilla extract



Instructions: 1. Preheat your oven to 350°F (175°C). Grease and flour a 9x13-inch baking dish. 2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

In a large mixing bowl, cream together the softened butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

1. Gradually add the dry ingredients to the wet ingredients, alternating with the sour cream. Begin and end with the dry ingredients, mixing just until combined. 2. In a separate bowl, toss the blueberries with sugar and lemon juice for the blueberry swirl.

Spread half of the cake batter into the prepared baking dish. Spoon the blueberry mixture evenly over the batter. Top with the remaining batter and spread it out evenly.

For the streusel topping, combine the flour, sugar, cold butter, and cinnamon. Use a fork or your fingers to mix until crumbly. Sprinkle the streusel over the cake batter.

Bake in the preheated oven for 45-50 minutes or until a toothpick inserted into the center comes out clean.

While the cake is cooling, prepare the cream cheese glaze by beating together the cream cheese, powdered sugar, milk, and vanilla extract until smooth.
