Preheat and Prepare:

Preheat your oven to 250°F (120°C). Line two large baking sheets with parchment paper or silicone baking mats.

Pop the Popcorn:

Pop the popcorn kernels using your preferred method (air popper, stovetop, or microwave). Make sure to remove any unpopped kernels.

Prepare Caramel Sauce:

In a medium saucepan over medium heat, melt the butter. Stir in the brown sugar, corn syrup, and salt. Bring the mixture to a boil while stirring constantly. Once it reaches a boil, let it cook without stirring for 4-5 minutes.

Add Baking Soda and Vanilla:

Remove the caramel mixture from heat and quickly stir in the baking soda and vanilla extract. The mixture will bubble up, so be careful.

Combine with Popcorn:

Place the popped popcorn in a large mixing bowl. Pour the caramel sauce over the popcorn and gently fold until the popcorn is evenly coated.

Bake the Caramel Popcorn:

Spread the caramel-coated popcorn onto the prepared baking sheets in an even layer. Bake in the preheated oven for 45-60 minutes, stirring every 15 minutes. This helps to evenly coat the popcorn with caramel.

Cool and Break Apart:

Allow the caramel popcorn to cool completely on the baking sheets. As it cools, it will harden. Once cooled, break it into clusters or individual pieces.
