Atlantic Beach Lemon Pie

Ingredients: For the Crust: – 1 1/2 cups graham cracker crumbs – 1/3 cup melted butter – 1/4 cup sugar

For the Filling: – 1 can (14 ounces) sweetened condensed milk – 4 large egg yolks – 1/2 cup fresh lemon juice – 1 teaspoon grated lemon zest

Instructions: 1. Preheat the Oven:Preheat your oven to 350°F (175°C).

Make the Crust:In a medium bowl, combine the graham cracker crumbs, melted butter, and sugar. Press the mixture into the bottom and up the sides of a 9-inch pie dish. Bake the crust in the preheated oven for 8-10 minutes or until it's lightly golden.

Prepare the Filling:In a large bowl, whisk together the sweetened condensed milk, egg yolks, lemon juice, and lemon zest until well combined. Pour the filling into the cooled crust.

Bake the Pie:Bake the pie in the preheated oven for 15-20 minutes or until the filling is set. The edges of the pie should be firm, but the center may still be slightly jiggly.

Cool the Pie:Allow the pie to cool to room temperature, then refrigerate it for at least 4 hours or overnight to set completely.

Make the Whipped Cream Topping:In a chilled bowl, whip the heavy whipping cream and powdered sugar until stiff peaks form. Spread or pipe the whipped cream over the chilled pie.
