Almond Blueberry Pie

Ingredients: For the Crust: – 2 1/2 cups all-purpose flour – 1 cup unsalted butter, chilled and cut into small pieces – 1/4 cup granulated sugar – 1/4 cup ground almonds – 1/2 teaspoon salt – 1/4 cup ice water (or more as needed)

For the Filling: – 4 cups fresh blueberries – 1 cup granulated sugar – 1/4 cup cornstarch – 1 tablespoon almond extract – Zest of one lemon

Instructions: 1. Prepare the Crust:In a food processor, combine flour, sugar, ground almonds, and salt. Add the chilled butter and pulse until the mixture resembles coarse crumbs.

– Gradually add ice water, one tablespoon at a time, and pulse until the dough comes together. – Divide the dough in half, shape into disks, wrap in plastic wrap, and refrigerate for at least 1 hour.

Preheat the Oven: – Preheat your oven to 375°F (190°C).

Roll Out the Crust: – On a floured surface, roll out one disk of the chilled dough to fit your pie dish. – Place the rolled-out crust into the pie dish and trim any excess dough.

Prepare the Filling: – In a large bowl, combine blueberries, sugar, cornstarch, almond extract, and lemon zest. Toss until well combined.

Fill the Pie: – Pour the blueberry filling into the prepared pie crust.

Roll Out the Top Crust: – Roll out the second disk of dough and place it over the blueberry filling. – Trim any excess dough and crimp the edges to seal the pie.

Add the Topping: – In a small bowl, combine sliced almonds and sugar. Sprinkle this mixture over the top crust.

Bake: – Place the pie on a baking sheet to catch any drips and bake in the preheated oven for about 50-60 minutes, or until the crust is golden and the filling is bubbly.

1. Cool:Allow the pie to cool completely before slicing. This will help the filling set. 2. Serve:Slice and serve the almond blueberry pie on its own or with a scoop of vanilla ice cream.
