Air-Fryer Salmon Cakes

Ingredients: – 1 pound fresh salmon, cooked and flaked (or canned salmon, drained) – 1/2 cup breadcrumbs – 1/4 cup mayonnaise – 1/4 cup finely chopped green onions – 1/4 cup finely chopped red bell pepper – 1 tablespoon Dijon mustard

– 1 tablespoon lemon juice – 1 teaspoon Old Bay seasoning (or your favorite seafood seasoning) – 1/2 teaspoon garlic powder – Salt and pepper to taste – 1 large egg, beaten – Cooking spray or a small amount of oil for greasing the air fryer basket

Instructions: 1. Prepare Salmon:If using fresh salmon, cook it by baking, grilling, or poaching. Once cooked, let it cool, then flake it into small pieces. If using canned salmon, drain it and remove any bones.

Mix Ingredients: – In a large bowl, combine the flaked salmon, breadcrumbs, mayonnaise, green onions, red bell pepper, Dijon mustard, lemon juice, Old Bay seasoning, garlic powder, salt, and pepper. Mix well.

Form Patties: – Divide the mixture into equal portions and shape them into patties. The size can vary based on your preference, but aim for about 3 inches in diameter.

1. Coat with Egg:Dip each patty into the beaten egg, ensuring it is well-coated. 2. Preheat Air Fryer:Preheat your air fryer to 375°F (190°C) for a few minutes.

Air-Fry: – Lightly grease the air fryer basket with cooking spray or a small amount of oil. Place the salmon cakes in the basket, ensuring they are not overcrowded. Cook in batches if necessary.

Air-fry the salmon cakes for about 8-10 minutes, flipping them halfway through the cooking time, until they are golden brown and cooked through.

Serve: – Once cooked, remove the salmon cakes from the air fryer. Serve them hot with your favorite dipping sauce, a side of salad, or on a bun as a sandwich.
