Air Fryer Loaded Zucchini Skins

Ingredients: – 4 medium-sized zucchini – 1 cup shredded cheddar cheese – 1/2 cup cooked and crumbled bacon

– 1/4 cup sour cream – 2 green onions, thinly sliced – Salt and pepper to taste – Olive oil spray

Instructions: 1. Preheat your air fryer to 375°F (190°C). 2. Wash and dry the zucchini. Cut each zucchini in half lengthwise.

Use a spoon to scoop out the seeds and flesh from the center of each zucchini half, leaving about 1/4 inch of flesh to create a "boat."

Place the zucchini boats in the air fryer basket. Lightly spray them with olive oil and season with salt and pepper.

Air fry the zucchini for 8-10 minutes, or until they are just tender. The time may vary based on your air fryer model, so keep an eye on them.

While the zucchini is air frying, prepare the filling. In a bowl, mix together the shredded cheddar cheese, crumbled bacon, and sliced green onions.

Once the zucchini boats are done, remove them from the air fryer. Carefully fill each boat with the cheese, bacon, and green onion mixture.

Return the filled zucchini boats to the air fryer and cook for an additional 5-7 minutes, or until the cheese is melted and bubbly.

1. Remove the loaded zucchini skins from the air fryer and let them cool for a few minutes. 2. Drizzle each zucchini boat with sour cream just before serving.
