Air-Fryer Chicken Taquitos

Ingredients: – 2 cups shredded cooked chicken (rotisserie chicken works well) – 1 cup shredded cheese (cheddar, Monterey Jack, or a blend) – 1/2 cup salsa – 1 teaspoon ground cumin – 1 teaspoon chili powder

– 1/2 teaspoon garlic powder – 1/4 teaspoon onion powder – Salt and pepper to taste – 10 small flour or corn tortillas – Cooking spray or oil for spraying the air fryer basket

Optional toppings: – Sour cream – Guacamole – Salsa – Chopped cilantro – Lime wedges

In a mixing bowl, combine the shredded chicken, shredded cheese, salsa, cumin, chili powder, garlic powder, onion powder, salt, and pepper. Mix well until all ingredients are evenly combined.

If you're using corn tortillas, you might want to warm them slightly to make them more pliable. You can do this by wrapping them in a damp paper towel and microwaving for 20-30 seconds.

1. Place a few tablespoons of the chicken mixture onto each tortilla, spreading it along one edge. Roll the tortilla tightly around the filling to form a taquito. 2. Preheat your air fryer to 375°F (190°C).

1. Place the taquitos in the air fryer basket, seam side down, making sure they are not touching each other. 2. Lightly spray the taquitos with cooking spray or brush them with oil to help them crisp up.

Cook in the air fryer for 10-12 minutes or until the taquitos are golden brown and crisp. You may need to flip them halfway through the cooking time for even browning.

Once done, remove the taquitos from the air fryer and let them cool for a few minutes before serving.

Serve the chicken taquitos with your favorite toppings, such as sour cream, guacamole, salsa, chopped cilantro, and lime wedges.
